Peach & Mint Salad with Feta

Ingredients

  • 4 ripe peaches or nectarines, sliced

  • ¼ cup extra virgin olive oil

  • ¼ cup balsamic vinegar

  • Salt and freshly cracked black pepper, to taste

  • 1 teaspoon Aleppo pepper (or crushed red pepper flakes)

  • ¼ cup fresh mint, chopped

  • ½ cup feta cheese crumbles

  • Agave syrup, for drizzling

Instructions

  1. Slice the peaches or nectarines and place them in a large bowl.

  2. In a separate bowl or measuring cup, whisk together the olive oil, balsamic vinegar, salt, pepper, and Aleppo pepper until well combined.

  3. Pour the dressing over the peaches and gently toss to coat.

  4. Add the chopped mint and feta crumbles, folding everything together carefully so the fruit stays intact.

  5. Finish with a light drizzle of agave syrup over the top.

  6. Cover and refrigerate for at least 1 hour before serving. This gives the peaches time to soak up the dressing while the flavors meld together beautifully.

Tips

  • Nectarines work just as well as peaches and hold their shape a bit better.
